The unbeaten Smith extended his record to 18-0 (13 KOs) by stopping fellow local lad Fielding (21-1, 12 KOs) in a thrilling fight while it lasted.
Mundo will now be targeting a world-title shot in 2016, with current WBC champion Badou Jack in his sights.
On the undercard, Scottish lightweight Ricky Burns gave a reminder of his abilities with an 11th-round stoppage of Josh King.
