Mitch Marner was the early story for Vegas. He recorded a hat trick in six minutes and 10 seconds in the second period to bolster the Golden Knights' lead.
The start of the contest was relatively quiet, as each team only mustered one shot on goal in the first five minutes during a scoreless opening frame.
Vegas appeared to get on the board 36 seconds into the second period with a goal from Mark Stone, but it was waved off after Brett Howden was confirmed to be offsides.
The Golden Knights almost took another 1-0 lead once Jack Eichel seemed to score shortly afterwards, but it was disallowed due to goalie interference.
Vegas finally broke the tie after Tomรกลก Hertl scored on a power play.
The Golden Knights weren't finished, as Marner picked up three consecutive goals before the end of the period to complete the natural hat trick.
Vegas held a commanding 4-0 lead heading into the third period and appeared to be on the verge of a lopsided win, but Carolina wasn't finished.
With just under 13 minutes remaining in the third period, the Hurricanes scored three times in a 39-second span to trail by just one goal. Jordan Martinook, Taylor Hallย and Jordan Staal were responsible for the trio of goals.
Carolina finally tied the game with under two minutes left in regulation, as Andrei Svechnikovย picked up a chaotic power-play goal.
Dylan Coghlan and Marner both had opportunities to score in the first overtime period, but Hurricanes goaltender Brandon Bussi saved both shots before Theodore won the game for the Golden Knights in double overtime.
Game 4 between Carolina and Vegas is on Tuesday at 8 p.m. ET.
