Twitter has become big in the world of sports, and especially so in MMA. With the implement of "Twitter bonuses" from the UFC brass, Twitter has become very important to fighters.
Fighters use humor and trash talk in their tweets, often leading to comedy gold.
Some honorable mentions I will put down for the sake that there are so many good tweets are:

1 of 6The boss of the UFC is one of the best tweeters in MMA. It may not be due to creativity, but it is definitely due to his blunt and honest reactions.
White is constantly grilled by fans, for which he usually provides a somewhat offensive, always entertaining response. He also tweets after most of the fights, voicing his utmost opinion on how it went.

Forrest Griffin
2 of 6Forrest Griffin's in-cage abilities may have slowed these days, but he is a very active Twitter user.
Griffin is creative and humorous with his tweets, despite the trouble he got in for his tweet which mentioned rape (for which he apologized and donated his Twitter bonus to charity). You can always count on Griffin to use self-humiliating humor for a laugh on Twitter.

Miguel Torres
6 of 6Very similar to Forrest Griffin in terms of tweeting, as they are both extremely funny and both have gotten in trouble for tweeting something about rape (eventually he also apologized and made a donation).
Just by looking at Torres's profile picture, you know right away he will be an awesome tweeter. Take for instance, "Why lift weights when you can guillotine them."
Confusing, yet very funny. Torres is definitely worth the follow.
