How do I follow the minors well? Three resources:
Baseball Prospectus (both the book and the website subscription)
Baseball America Prospect Handbook
and minorleaguebaseball.com, where you can easily look at stats for any team.
Also, I have a ridiculous memory, so I just remember what I see.
How'd I get into it. Short answer is Moneyball and Baseball Prospectus, especially Baseball Prospectus, which I just happened to pick up one day three years ago and I guess I've never looked back.
As far as Birmingham goes, the name that jumps out at me on the roster is Micah Schnurstein--he can hit like hell. Kyle McCulloch was picked in the first round a couple of years ago but is just a finesse pitcher. Brian Omogrosso is the closest thing you have to "the next Jenks," but he isn't that amazing. CF Miguel Negron and SS Rob Valido are former top prospects whose stock has slipped, but they're both athletic guys who are fun to watch on the field and the bases. I don't recognize the rest of the roster very much, and according to the Prospect Handbook no one else on the current roster is among the White Sox top thirty prospects.

Hey man, sorry about being late getting back to you, but thanks for the kind words on the NL Central piece. I was just kind of scrolling through my own archives and I wasn't even aware you had a comment in there. I like Dunn don't get me wrong, but he's going to either strikeout or homer, and he probably wouldn't be "the guy" I build a team around—even on an AL team. I'm excited to see what Griffey Jr. does this year.
I've found that it's pretty hard to please everyone in doing these, but if a few people like them, then it's definetly worth my time. Thanks for the feedback and good luck on the season!
